My two favorites are Hawaiian Chicken and Chicken Parm. I like to cut the chicken in half so that it cooks faster. If you skip that step, you'll need to increase the cooking times.
Hawaiian Chicken: 2 chicken breasts cut in half lengthwise (making 4 thinner pieces) 1 cup fresh pineapple, diced or 1 can, drained 1 red bell pepper, largely diced 1/2 bottle Hawaiian marinade
Marinate in chicken in Hawaiian marinade (I prefer to Lowery's brand) Place marinated chicken in a glass baking dish Sprinkle pineapple chunks and diced red peppers over the chicken Bake at 400F for about 20 minutes or until no longer pink I like to serve this with rice, either brown rice or rice pilaf
Chicken Parm: this one does take a little more prep work but it's still pretty easy
2 chicken breasts cut in half lengthwise (making 4 thinner pieces) 1/2 C panko bread crumbs 1/4 C parmesan cheese 2 tablespoons olive oil 1 large clove of garlic, super finely minced 1 egg, beaten
Mix together the panko bread crumbs, parmesan cheese, olive oil, and garlic Dip the chicken in the egg, then the bread crumbs Place on a lightly greased baking sheet Bake at 400F for 20 minutes or until no longer pink Serve with pasta and sauce

This is super easy and comes out moist and juicy every time:
Using boneless chicken breasts lightly coat each piece in mayonaise, then roll in seasoned bread crumbs. Bake at 425 for 30 minutes. I serve them plain with bbq or honey mustard sauce, or top with salsa/cheddar or marinara/mozerella and put them back in the oven until the cheese melts. Easy, tasty, and I promise that they in no way taste like mayo.

I've used plain greek yogurt and parmesan cheese in place of the mayo too and it tastes really good!
I am not a huge chicken eater but for a quick dish I take the thin cutlets, put in a baking dish add enchilada sauce, taco seasoning, mexican cheese and chopped green onions. Bake at 350 for about 20 minutes. Quick and tasty
I LOVE this website. I think it is awesome that you can go search for a recipe & find several variations of it from real life people. DH is pretty picky & I've usually been able to find versions of popular dishes that don't include ingredients he doesn't like
