OK, so I decided to keep it simple for all these events I had this weekend. For the funeral I threw some pre-made meatballs in a crockpot with BBQ sauce. For the dinner for the family I bought a loaf of Italian bread and made a cake from a box with frosting from a can. I feel kinda bad about that but I know they appreciated the gesture either way.
I was supposed to go to a potluck after the funeral but when I got home I was too tired and my parents had Lincoln so I napped for two hours! By the time I woke up it was too late to cook so I brought three already-opened bags of chips from my pantry and some leftover pineapple upside down cakes from the funeral. The "regular" me would've been mortified but I am trying to get a grip.
For tonight's potluck I made a red velvet poke cake. I am also making loaded potato skin "coins." And lastly, I took some pizza dough and filled it with a dollop of ranch dressing, sliced turkey, bacon and cheese and rolled it up. I will then cut it into inividual servings. My DH mentioned he would've preferred pizza roll-ups but I figure a turkey club is good, too. I just really love rolling stuff up into pizza or crescent dough. For Lincoln's birthday last year I made several types of roll-ups and they were all almost gone by the end of the party and I must've made close to 200. Mmmn, crescent dough!

when i use crescent roll dough i do it exactly like that. for these, i used pizza dough and i cut itin half and made two out of them because i wanted them a bit thinner. i always add a few minutes on the cooking time, too.

You've inspired me to make some kind of roll up this week with pizza/crescent dough. Those kind of recipes fell off my radar for a while, and they're so quick and easy!
Definitely going to try something like this this week! (Not pizza, though....we had pizza last night, and it made me sick
