I am probably in the minority here, but I HATE HATE HATE mashed potatoes and a lot of so called comfort food.
However, DH loves it.
A few times a year I make him his favorites and make myself something else. I figure he could always order it if we went out to a restaurant.
My mom's opinion is that DH shouldn't suffer just because I don't like something and i should just make 2 meals more often. Or eat leftovers and make him dinner.

Not really. I'll make foods I don't prefer, but not foods I hate. Although actually, there's very little I hate, so maybe that doesn't count.
DH likes Asian-inspired food (like stir-fry) and I don't really care for it because I'm not a huge fan of rice. But I make it periodically, because it mixes things up and it's not like I won't eat it.

The only thing I make on occasion that I won't eat is eggs. I will actually probably make them more once DD is able to eat them because they are cheap, easy and a good source of protein.
Sometimes I make things I don't love just because DH is in the mood for it.
IMO, if your H really wants something he can make it himself.

For the most part, if I won't eat it, I won't make it. There are a few easy exceptions, like I will cook Italian sausage to go with pasta for DH but I haven't wanted to eat that since I got pregnant. When DH wants something I don't like/won't eat, he will make it for himself, and then I will usually make something he doesn't like.
I think there is no reason you should make 2 meals, just so he doesn't have to "suffer." But if he is fine with box mashed potatoes & other easy comfort sides, I might make them in addition to a meal you both enjoy.
I agree with the 2 examples you gave, btw.
If I absolutely hate it, I don't cook it. That being said there aren't many foods that I just hands down hate. I'm used to cooking food that doesn't necessarily appeal to me, but I'm ok with that.
I ask DH for input every week when I make the menu, and his requests are always included.
I try to keep our dinners varied and interesting, and sometimes that means that I'm making meals that I may not be crazy about. When that happens I just eat around what I don't like and that's that. I'm not going to be making two separate dinners though.
There is nothing DH eats that I don't. Literally nothing.
I'm not an adventurous eater by any means, he is just extremely ridiculously picky. If you wouldn't find it on a kids' menu at a restaurant, he'd rather not eat it.
But anyway, in your case...I think it would really depend how much your DH cares and how many foods we're talking about.

We take turns meal planning, and I will definitely choose meals I know I'll like. I'll cook things I'm not that fond of, tho, and eat it too.

however DH does, he doesn't like nor eat any kind of fish or seafood but he makes/grills them for me often (he does most of the cooking at home)

Nope, I don't make things I don't like. There are things DH likes that I hate (like fish) and I won't make that at all. There are also things I like that he hates (corn chowder, he hates corn.. pfffttt) that I won't make... so it works both ways.
Typically, when we love something and the other doesn't we will have these things in restaurants. Last time we went out, H had salmon. So it's not like we both go "without", if that makes sense. We just have them out of the house to get our fill.

I'm really not a picky eater though so even if something isn't my favorite chances are I still like it okay.
MH is faaaar pickier than I am and I try to be cognizant of his likes/dislikes when I meal plan. I actually end up NOT making things that I like much more often than making things I'm not really crazy about. But I do make things that I know he will enjoy more than I do sometimes.
