I use a recipe called Super Easy Chicken. Just put chicken in the crock pot, pour on a packet of Italian dressing mix, and then add enough water to cover the chicken. It's good!

Italian chicken (crock pot), garlic and parm cous cous, and peas. That's for the toddler and the husband. The thought of myself eating it makes me gag.
Baked parm. chicken. Thanks to the meat section of Super Target. Although what I want a fat juicy cheeseburger.

Leftover chicken with a quinoa salad that someone posted on a lunch thread the other day. I don't remember who it was but it is really yummy and I want to say thank you, thank you, thank you!
Quinoa, cucumbers, peppers, bacon, onion, pine nuts, salt, pepper and oil and balsamic. (I think that's it, I wrote it down at work and made it from memory because of course I forgot the recipe on my desk)
I started having a hard time with meats today but wanted more protein. I ate this with no problems and I'm excited for leftovers tomorrow!

I had pasta with alfredo sauce. It was something that sounded appetizing. I had grilled cheese for lunch today, and it was delicious. My m/s is really starting to kick in though so eating is really tough and I'm definitely not getting in my fruits and veggies right now.
But now I really want peas.. maybe I'll add some in.

Oh it is so delicious! And really easy. You just put a red pepper (I sometimes add half a tomato, some garlic and maybe half an onion) on a baking tray and cook at 400 for 30 minutes. During that time melt some goat cheese with half and half cream in a sauce pan. Remove the skin off the pepper and throw it in the blender alone with the goat cheese/cream mixture. Blend a bit (I like chunks) and toss with fettucini. I like to sprinkle parm and black pepper on top.
Dh is working so ds and I had a smoked pork chop and sweet potato wedges. Ds ate most of it because it is not appealing to me right now. I had some homemade chicken brother before dinner and I might finish the pot off once ds is in bed.

chicken noodle soup for this rainy evening:) i boiled an extra chicken breast so that the soup can be hearty and i can fill my protein quota for the day.

I was actually craving a REAL meal for once! We ordered out from Olive Garden...so spaghetti and meatballs with a salad here! )
We did BBQ chicken on the grill the other night with fresh veggies and fruit. I also love just cutting chicken breasts in small strips and mixing with grapeseed oil, onions, peppers, and fajita seasoning and baking in the oven - serving in soft tortillas.
Oh, a favorite easy chicken recipe of mine: Take boneless, skinless chicken breasts, coat with mayo and then in seasoned breadcrumbs and bake at 425 for 30 minutes. The chicken in no way tastes like mayo, but comes out super moist and delicious every time. I serve them plain (with bbq or honey mustard for dipping), or sometimes after they are cooked I top them with salsa/cheddar or marinara/mozzerella and pop them back in the oven until the cheese melts. Yummy and simple.
