Toddlers: 24 Months+

sneaking in veggies!

Does anyone have a recipe for sneaking in veggies and fruits into muffins for toddlers?

  • I have a cookbook from Jessica Seinfeld called Deceptively Delicious.  It is full of recipes with secret veggies.  So far we have liked the Mac and Cheese #2 and the banana muffins.  Sorry I don't remember the exact name of the muffins.  

    What I have learned from the book is to add pureed veggies to your regular recipes. I now add chopped spinach and pureed butternut squash to me meatloaf. 

    Good luck!  My 3.5 yr old is on a veggie strike right now!  Even the usual favorites are getting the cold shoulder!

  • I add small chopped veggies to most sauces, soups, and chilis.

    Zucchini Raisin Bran Muffins:

    • 1 1/2 cups wheat bran
    • 1 cup flour
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 1 cup raisins
    • 1 whole grated zucchini
    • 2/3 cup brown sugar
    • 1/2 tsp vanilla
    • 3/4 cup apple juice
    • 1/4 cup apple sauce
    • 2 egg whites or 1 egg
    • 1 tsp cinnamon

    Combine wheat bran and apple juice in a bowl and set aside for 10 minutes.

    Stir flour, cinnamon, baking soda, salt, and baking powder together in a bowl. wheat bran mixture and remaining ingredients and mix until combined.

    Pour batter into greased muffin tin and bake at 400 for 20 minutes or until tops are golden brown.

  • Use applesauce instead of oil. Makes them pretty much nonfat and adds the fruit. Also, try carrot cake muffins or pumpkin muffins.

    We have this book too, we really like it. DS has become very fond of muffins.
