We're doing leftovers tonight, and something easy tomorrow when DH has to work.
DH made these fabulously unhealthy chicken burritos yesterday. DS even ate 80% of his, which means that it must have been extra unhealthy
DH hasn't told me what he plans to make on his cooking nights, but we'll be having some bbq, enchiladas, and maybe some stuffed shells on the nights I cook.
I dug through my recipes and found on for garlic mashed potatoes, so I plan to make that with the BBQ.
My MIL brought her potato salad to our Memorial Day cookout. It's full of red onion, bacon and chopped dill pickle. Yumm.
Last night we had bourbon brown sugar steaks, asparagus and leftover potato salad. Tonight we have friends coming over for a cookout, so hamburgers and hotdogs.
Here are the meals I have planned for the rest of the week, in no particular order:
1: chicken wings, corn on the cob and deviled eggs
2: pork tenderloin with rice pilaf and grilled zucchini and squash
3: spicy teriyaki pork, pineapple and red onion kabobs with "fried" ramen
We have a lot going on this weekend, so I decided not to plan anything food wise yet. We'll play it by ear.

Thursday: pizza meatloaf
Friday: probably some kind of tex mex

Sunday: dinner with my parents
The yummiest thing I ate we're cookies my mom made. They were gluten free and had coconut, dark chocolate chips, walnuts, and oats.
Pizza meatloaf recipe: make meatloaf like you typically would, replacing ketchup with pizza or spaghetti sauce and adding Italian bread crumbs or seasoning with the binder you use. Grease a cup cake tin and press the meatloaf mixture into the tin. Press your thumb into the middle of the meatloafs and add mozzarella cheese in the center of each one.

I think the best thing we ate this weekend was grilled corn on the cob that DH made last night. It was just SO good!

W: Tacos? If I get to the market for lettuce. If not, Burgers, pasta salad, and corn on the cob. And then tacos on Thurs.
