whats your fave make ahead healthy dinner?

I have my dd and ds by myself most nights, and I am not getting to sit down to eat dinner (in peace) until 9pm. So not great for my weight loss goals. I need to start making dinners ahead of time, so I can grab something, heat it up and eat it while the kids are having their dinner (at 6, which is much better!). Any thoughts/ideas on make ahead meals?

  • I like making chili in the crockpot.  It will be ready to eat when you are and the leftovers will reheat perfectly.

  • Italian Chicken in the crockpot!  Chicken and a container of Italian dressing YUM!

     

    Precut veggies cooked in olive oil.

  • I always keep a rotisserie chicken in the fridge to cut up and throw on a salad.

  • Stir fry! Make a big batch of it with a cup of brown rice. When I reheat brown rice I throw some in a sauce pot add a little water and let it steam for a few minutes. Super easy to reheat and very healthy.

  • I like chicken breast in the crockpot. Just put in breasts and a bit of water. I shred it and use it in salads, sandwiches, and tacos.
  • All of these are great! I also like to make pasta and turkey sausage and put them in serving size containers. Then in smaller ones i out chopped up spinach, bell peppers, and feta. I stack them in the fridge and when I'm ready to eat them i just heat up one of the pasta/sausage containers, mix it all together and drizzle with olive oil...filling, healthy, and lots of protein/veggies :)

    also, if you're an egg person, mix up a batch of eggs with bacon or sausage, cornbread crumbled up, bell peppers, spinach, (or any other things you'd like to add) and sprinkle the top with feta cheese. Pour intomuffin tins and bake at 350 until theyre cookedall the way through. 

    Yu can refrigerate and heat up later with hot sauce and salsa...if your heartburn isn'tto bad:)
