I would like to start cooking more vegetarian meals in our home. Would you mind sharing some of your favorite recipes or meal inspirations? Now that summer's coming up, I look forward to farmers markets and fresh veggies!
oh oh oh , I second this request. I want to be MORE vegetarian but Im a terrible cook. Im also trying to accommodate DHs paleo diet so cooking vegetarian with no carbs or beans and limited nuts is IMPOSSIBLE...please tell me Im wrong.

Ok, so I'll preface this by warning you that one of my husband's biggest complaints with my cooking is that I love trying new recipes, so that means he'll love something and then I'll never make it again, haha. I've gotten a little better though since pinterest because I can actually keep track of what I've made, so I'm going to give you some of my favorite pins.
This is orzo with roasted chickpeas and broccoli, if you want it as a main you probably want to make a big salad with it (we literally have a big salad every night). The roasted chickpeas are super tasty.
If you're trying to do the paleo thing, these "pizzas" are actually made on potatoes, I thought it was super tasty, DH thought it was a little odd. I just made my vegan one with no cheese and put cheese and pepperoni on his.
This is another paleo one, and DH and I both loved it. It's not super duper filling, so again I'd go with a big salad. I'm kinda obsessed with spaghetti squash though.
This is from that same blog, I love pasta with some sort of creamy avocado pesto, I just make up my own too sometimes if we have the right ingredients.
