I am actually home today, and I'm making fish tacos for dinner (always sounds a little dirty when I say it...)
Other than perusing different recipes online, I'm completely winging it. Other than baby girl, the one joy I have is having the time to cook a new dinner and seeing if it turns out. Most of the time it's all good. Sometimes...not so much.
I'm beer battering tilapia (haddock would be ideal, but let's face it, I'm in Ohio.) I would love to have grilled corn on the cob to use for my corn salsa, but I deemed that too much work and I'm just using thawed kernels. The tacos are to be topped with a chili-lime cream sauce.

Sweet/salty is my jam and I'm realllllly excited! I'll take most of them to work with me so I don't have temptation lying around all day.
Currently my corn/jalapeno salsa is chilling out in the fridge, the chili-lime sauce is doing it's thing, so it's time for baby girl and I to pick up dessert ingredients.

All of this! I just want to eat Popsicles for dinner! Something cool and refreshing. A salad would probably be a better choice though.

My Dad gave me some BBQ ribs on Saturday from our Mother's Day cookout. I put them in the crock pot and cooked them down and made them into BBQ pork sandwiches.
