I don't really know of any herbs or spices that are not safe, including salt. Avoid raw honey until he's 1, but otherwise, I think you can use anything.
DD used to love curried mushy peas, and she still LOVES curry and Indian food in general.
Generally speaking I don't know that any are off-limits, including salt which is fine for kids, and actually necessary in your diet. Of course it can be an issue when eaten in excess, just like anything, but you don't have to eschew salt altogether.
My LO seems to prefer his food "with flavor" vs blander foods. We just serve him the same dishes we eat, so he's had a pretty wide variety of seasonings. Like PP's LO, he loves curry.
