I read that we should not eat ramen noodles due to the sodium content and no nutritional value; however, I am craving crunchy Asian coleslaw and they are in it. What do y'all think?
Bleh, ramen. The little flavor packets are what have the high sodium content. You should be good with Asian coleslaw. There is plenty of nutritional value in that stuff. Don't sweat it.
I could be wrong, but I thought that was more a reference to the packaged freeze dried ramen noodles with the powdered flavor packet rather than the noodles themselves.

Yup, PP is right about the packets. The noodles are totally fine, but I would use just a little bit of the packet flavoring and regular chicken broth.

I eat ramen every so often, I just use half the package, and I throw away a chunk of the noodle before I cook it, just because of the high calorie content (almost 400 for those noodles!)
You can use just the noodles and mix w/a bag of stir fry veggies and some low sodium soy sauce, it's really good! I make breaded tofu sometimes and toss that in. Just cook it all separately and then saute it all together in a wok w/the soy sauce.

Wow! That's a lot of calories and the recipe calls for 2 packages. The good think about the coleslaw is that you don't eat all the noodles at one time. Thanks everyone!!

If you have a good Asian food store near you, they have refrigerated ramen and undon noodle packages that are lower cal because the aren't deep fried. I also found some that only had 1000 mg of sodium....
