  • Lasagna (or Manicotti, stuffed shells, etc)

     Ingredients:

    lasagna noodles

    spaghetti sauce

    hamburger (optional)

    2 eggs

    mozzarella cheese shredded

    2-3 8oz cream cheese bricks softened

     I prefer the no bake lasagna noodles so there is less to do, but you can use the regular noodles if you would like.  Let cream cheese soften during the day.  Preheat oven to 375.  Brown hamburger.  While hamburger is browning warm up spaghetti sauce. In a small mixing bowl combine softened cream cheese and eggs.  Mix well.  After hamburger browns, drain and add to spaghetti sauce.  Begin layering your lasagna.  I do noodles, spaghetti sauce/hamburger mixture and cream cheese mixture.  Bake covered for 30 minutes.  Remove from oven and sprinkle with mozzarella cheese.  Bake uncovered until cheese is melted.  Enjoy!

     The only difference between the lasagna and the manicotti or stuffed shells is I add mozzarella cheese to the cream cheese mixture for the manicotti and stuffed shells.  I add approximately 2 cups of mozzarella cheese.  The manicotti and stuffed shells are great for freezer meals.  I cook the noodles and stuff them with the cream cheese mixture and then put them in a freezer bag.  When I am using them for dinner I bake it at 350 for about 30-45 minutes.

  • Another one of my favorite meals:

    Stuffed Chicken 

    Ingredients:

    boneless, skinless chicken breasts

    mild cheddar cheese block, sliced into 1/4"-1/2" thick

    2 eggs beaten

    flour 

    bread crumbs

    olive oil

    Preheat oven to 400.  Put some olive oil in a pan and let it heat up.  Slice a small slit in the side of the chicken.  Place a slice or two of cheese inside chicken.  Put chicken in egg and cover it with egg.  Next coat the chicken with flour.  Put chicken back into egg mixture.  Next coat it with the bread crumbs.  Place in heated pan.  After a minute or two turn chicken over.  After another minute or two place chicken to baking dish.  Repeat process for all your chicken breast pieces.  Bake for 20-30 minutes in oven.  

    A side dish I like to make with it sometimes:

    Shrimp and Asparagus Pasta

    Ingredients:

    Shrimp

    Asparagus

    Pasta of your choice

    Alfredo sauce

    Cook pasta of your choice according to the directions.  Meanwhile cook shrimp and asparagus to your liking.  Warm up alfredo sauce (or make your own).  Add all ingredients in a bowl and stir.  It's actually quite yummy!

  • Sorry I can't make this link clicky. I made this Spinach Lasagna Roll-Ups recipe this past week and it was really tasty and easy I will defiantly be making this again!

    Polish Sausage and Potatoes:

    1 package Polish Sausage (sliced)

    several potatoes (diced)

    1 onion (chopped)

    Heat some oil in a large skillet. Onion goes in first, then potatoes, then sausage. I season with garlic salt, garlic powder, and pepper.

  • I love breakfast food for dinner, so here is a breakfast dinner

    cresent rolls unrolled

    in a square pan works best

    cooked crumbled sausage or bacon or both

    2cups mozzarella cheese

    whip 6 eggs

    1 cup milk

    pour on top

    bake at 425 for 20min 

    add salt and pepper
