Poop! Eating, playing and sleeping with it!

Well, this is now the second time J has popped, and in stead of telling us, he has taken it out of his diaper and done all sorts of things with it - including changing the color on the walls, marinating the bed and eating it. It completely disgusts me, and I don't know what to do about this!
First time was on Sunday - and I honestly thought that it was a one-time-thing - obviously not.
Couple of things I think might be the solution:
1. Toilet training (he refuses to sit on the potty - but is more comfortable on the toilet), whivh means we need to .. see pt. 2.
2. Switch over to big boy bed so he can go out of the bed to use the toilet (or to tell us he needs to go) - (this could possibly leave us with poop all over our joined bedroom which obviously is undesirable)
3. Get pajamas that are opened in the back, instead of the front - if they exist?
Other suggestions are more than welcome!

Or if you have a product called Duck Tape use that to tape around the waist of the diaper over the adhesive tabs...so he cannot open the tabs on the diapers ( I am assuming that you are using disposibles). I have used this at nap times for my boy
Thankfully we have not had this issue but I have definitely heard other moms deal with this! Do you still have a monitor laying around that you could listen in and maybe catch him right when he wakes up before he can get into mischief? Or a video monit

You can also try the duct tape diaper trick. But what I do is simply put a sleep sack on backwards over her pjs.
