tried and true crock pot meals?

I posted this on my Dec 2010 board, but this one seems more active so I thought I would post for help here too...

Now that our second LO is due in just 7 weeks, I am looking for some crock pot meal suggestions to have in my arsenal.

I am kind of picky though - if you have something that fits these requirements, please help a girl out and send the recipe link!! :)

1. Something relatively light / healthy - this is a hard requirement, I know!

2. Not a TON of advance prep - basically if I have to brown the meat in batches and soften vegetables before putting it in the crock pot, that may be too much for me and I'd rather just use my dutch oven recipes in that case.

3. I'm not a big fan of ground turkey.

4. Something you've actually tried and can vouch for would be great - I see a lot on pinterest and I know I can google a million recipes, I'm really looking for ones people have actually tried. :)

  • Drain a big can of pineapple and throw the pineapple in the crockpot with a big bag of frozen boneless skinless chicken breasts and a bottle of BBQ sauce. Shred it all up with a fork when it's done, stir, and make BBQ chicken sandwiches.

  • There is no official recipe, but it's a staple in our house. 

    Toss a pork shoulder loin into the crock pot with a packet of Lipton Onion Soup Mix and fill up the crock pot almost covering the roast with chicken stock.  Set for 6 hours.
