He hasn't been excited about many purees. However he loves fish. We eat cod/salmon 2 times a week and I'm happy to give it to him. However, I was thinking about the mercury problem. Thoughts?

Twice a week, I wouldn't worry about it. Especially since the fish you named are low in mercury.
