Gosh, you named all my staples. Eggs, waffles & pancakes. My son won't eat most cereals (takes after his mom) and during the week he eats fruit and the little mini waffles basically every day.
If he doesn't eat yogurt any other time of day
fruit, yogurt, sausage links (her fav), cottage cheese, waffles, pancakes, bagel with cream cheese, cereal, eggs, applesauce, doughnuts on Saturday mornings
I make big batches of pumpkin pancakes, french toast, and zucchini muffins and freeze them.
He also eats yogurt, turkey sausage, quiche, blueberry waffles, toast, english muffins, and mini bagals.
