Q re: freezing enchiladas

A couple people (I think amywalt and kikalynne?) mentioned recently that they freeze enchiladas.  I'm getting ready to make a big batch with some leftover crock pot salsa chicken.

Anyway, how do you freeze them?  I'm not necessarily looking to put them in a foil pan for baking them all at once, I'd like to be able to pull them out individually as needed.  Can I just line them up in a gallon freezer bag?  Or will the tortillas stick together?  Should I try to freeze them on a tray (not touching) before transferring them into a freezer bag?

I'm probably totally over thinking this, but I get nervous when I try to get creative in the kitchen.  It doesn't always end well.  LOL! Any tips are appreciated!

  • I do not understand how freezing them for individual servings would work at all, given the nature of enchiladas. My best solution would be to freeze small portions but not in freezer bags because in a freezer bag they could easily come unrolled either whi

  • I'm not much help since I've only ever frozen them in a large batch pan. Maybe you could find smaller foil containers that would fit 2 or 3? I have a vague mental image of mini loaf pans.

  • I put 2 in a sandwich sized freezer ziplock bag and then put as many of those into a gallon freezer ziplock that will fit. I feel like they're less likely to get freezer burned when I put them in a gallon sized too. The sandwich sized bags can be pulled o

  • I do mine in a 9x9 pan, which is good for me and DH to have supper. I think loaf pans would be a good idea for one, but the kind I make have sauce dumped over them and dipped and whatever so freezing in a ziplock wouldn't work for me

    Countrywed, I found a stray (kinda mangled and dented, but still usable!) 8x8 pan in the pantry, and it fit four perfectly.
