1st Birthday cake- food allergy moms come in!!

I have already begun planning my little guy's 1st birthday (sniff sniff) and I am wondering what the heck I'm gonna do for his cake/cupcakes. He was diagnosed with cows milk and soy protein intolerance at 2 months and I thought he would have grown out of it by now but they still seem to bother him, hence why he is still on super expensive Elecare formula. He has a sensitive tummy in general too. Does anyone with a MSPI baby or food allergies have any ideas for what kind of cake or treat you're going to make? Obviously I'm going to make regular cupcakes for everyone else but he's going to need his own special dairy/egg free treat.

You can get a cake mix from Cherrybrook Kitchen - nut free, dairy free, gluten free and egg free. If you want to make it from scratch you can most likely find a recipe at https://www.livingwithout.com/

Do you need it to be just dairy & soy free or eggs too?

You can check out mspimama.com for recipes. I've made the orange cake - it was pretty good. Also I believe some major mixes (like Betty Crocker yellow cake maybe?

I use regular recipes but use almond milk instead and use soy free shortening. My son also has MSPI and I breastfeed so I can't eat dairy or soy. Honestly, I think recipes are even better now! Perhaps I just appreciate them more ;
