reems or other baby chef's

I'd like to make some waffles for dd for breakfast.  I found a nice recipe here:

any thoughts on substituting for eggs and shortening?  I can drop the salt and spices we aren't ready for, but not sure about eggs,  Thoughts?

  • It's fine to cook with eggs for babies. If you really want to, you can just use the yolk and add a little water to replace the egg whites, but you don't need to. I also bake with butter all the time... babies need fat, there is no reason to substitute it. When I make waffles for my girls, I add some applesauce or pumpkin puree to the batter to make it healthier. I also always add some cinnamon or nutmeg, which they also love on their fruits.

  • I cook with eggs.  Our pedi is okay with eggs (I even make him scrambled eggs)...  I also use butter and some light spices..  Right now he is eating pork loin chops (minced) marinated with olive oil, garlic, and thyme..  Your child needs to get used to your cooking..  Unless it's spicy or super fatty I would go with it the way it is....
  • since we've seen NO signs of allergies, I let Ava eat eggs baked in stuff. I use applesauce whenever it calls for oil, baby or not.

  • We absolutely cannot do eggs. They cause mass diarreah and wheezing immediately every single time so I have some subsitutions for you. Eggs usually work either as a binding agent or a leavening. (or both) In your waffles they're probably a leavening agent.

    Leavening:

    1 egg =

    2 tablespoons carbonated water and 2 teaspoons baking flour

    1tsp baking bowder + 1 tablespoon water + 1 tablespoon vinegar

    1tsp yeast dissolved in 14C water

    1tablespoon cornstarch and 3 tablespoons of water

    Our pedi also said introducing them too soon and continuing to do so could actually create an egg allergy so I took that to heart. We only just tried it out this month. Obviously it didn't go well.
