I would totally look on Pinterest, but I like hearing ideas from actual people (not those who repin pretty looking meals).
I'm not vegetarian, but I try to avoid eating meat about 4 days of the week. This allows us to spend more money on good quality meat from our local butcher.
Anyway, from my ticker you can see I'm 11 weeks pregnant, and have a huge meat aversion right now. I'm looking for some healthy vegetarian slow cooker recipes.
I'm ashamed to say that I only have one vegetarian slow cooker recipe--which I love--but I need to add more to the collection.

I am vegetarian and it is hard to find slow cooker recipes. I guess the easiest is chili. I just use a mix of black beans, kidney beans, tomatoes, and corn with chili seasoning. Not very groundbreaking.
This isn't a slow cooker meal, but for the longest time I was craving sloppy joes. I found several recipes that included meat substitutes but I couldn't find any in the stores. So I just grated cauliflower, green pepper, carrots and onions and made a sloppy joe sauce. It was so good! I haven't eaten meat in a decade, but I swear it tastes better than the original.
I got it on Pinterest, which is where I get 90 percent of my recipes. Good luck!
I've been vegetarian for a few years now and H and I LOVE our slow cooker! First, we use them to cook our own chickpeas, beans, and lentils, which we buy in bulk. Much cheaper and better than buying them canned!
Second, there are lots of great soup and stew recipes that you can make in a slow cooker. Here are some of our current favourites:

I use this one all the time because I can freeze batches of it. I'll always add whatever veggies I have on hand. I just made this last week, and threw in a can or corn and some black and pinto beans. It's easy peesy!
