Delicious Recipe!

Hi ladies.... I had quite a baby food marathon tonight and I'm proud of the delicious recipe I concocted, so I thought I'd share.

Ingredients:

1/2 small onion, chopped small

1 tbs of butter / olive oil

2 cups of baby spinach (stems removed)

1/2 medium broccoli head trimmed into florets.

1/2 cup sweet peas

1 large sweet potato

1 1/2 cup of organic broth (I used chicken since that's all I had).

Melt butter and saut?e onion till soft, then mix in the spinach till it wilts. Then add other greens and saut?e it a little more.  Add chopped sweet potato and the broth.  The quantities are estimates, you may need to add some more broth.

Let it simmer till the sweet potato is soft and stir often so it doesn't burn the bottom.

Pur?e or mash.

Delish!

Re: Delicious Recipe!

  • Thank you!

I need recipes like this. I have NO idea what I'm doing when it comes to my LO's meals, especially seasoning!

  • I've seen a couple recipes that call for chicken broth....but I was concerned with the sodium. Do you use a salt-free broth? Usually the store-bought broths are so high in sodium!

  • I used an organic one - sodium free.  But I have used swanson low sodium as well.  If you're really concerned, you can just use water.
