For today? I had a protein bar for breakfast, oatmeal for a snack, and a snack bar this afternoon. DH made a chicken casserole for dinner.... I'm not even on a diet, this is what happens when I leave my lunch in the fridge at home .... I missed my pork chops at lunch time!
The kids had pancakes for breakfast, I'm not sure what they had for lunch, and had chicken casserole for dinner.
To make myself look better I'll need to back track.
Saturday - Flat Iron Steak with balsamic glaze, baked potatoes, mushrooms and salad
Sunday - country pork chops with homemade scalloped potatoes
Tonight - leftovers
Tuesday - DH works Tues nights so it's our eat out night, most likely chicken nuggets for the kids
Wednesday - Hopefully back on track, planning on bruschetta chicken
Thursday - Pork tenderloin
Friday - it's Lent, we're Catholic, that spells Fish Fry! Who knows, maybe we'll be celebrating a new Pope.

Secondary infertility success with IVF, then two losses, one at 14 weeks and one at 10 weeks, then success with IUI and then just pure, crazy luck. Expecting our fifth in May as the result of a FET.
Recently I got 'back on the wagon' with meal planning. with baby #2 and the cost of daycare looming, something needed to be done. Not to mention just the unhealthiness of eating out. we were all starting to feel it.
I try to do one casserole type dish, and one - two slow cooker recipes. With the leftovers, we take these for lunch. on the other two nights, what i do is one for leftovers and one with a super easy dinner - either hot dogs, sandwiches, cereal, breakfast, etc. We eat out one night on the weekend and cook the rest of the time. we also get salad stuff and fresh fruit and veggies to put on the sides of dishes. DD doesn't eat the food we eat so often she will have some whole wheat pasta, which she takes the leftovers to school or a sunbutter or PB & J sandwich.
This week's meal plan:
Sunday; Lasagna with meat sauce, salad
Monday: slowcooker Salsa lime chicken tacos (light), brown rice
Tuesday: slow cooker spicy beef tips over brown rice
Since I'm 6 weeks pg, my meal planning has gone to cr@p and we're eating too much take out. By the way French fries w feta cheese are incredible.
my other meals planned for this week are tacos, cheese raviolis with grilled portabellas and zucchini, salmon w pesto roasted potatoes, carrots and asparagus.

I almost never plan ahead for the week, which usually leads to some interesting creations. But, i've been meaning to do this and yesterday i made turkey meatballs to make tonight. It was so nice to get home, pop them in the oven and take DS for a walk while they were cooking! So...

Our breakfast choices for the week: homemade breakfast burritos, overnight oats in a jar, bagels w/ricotta
Our lunch choices for the week: roasted chicken sandwiches, cobb salads in a jar, asian chicken salads in a jar
DDs lunches (I pack her lunch and am embarassed to serve her the same thing twice): roasted chicken sandwich, lentil walnut burger, sweet potato and black bean burrito, butternut squash ravioli, white bean and avocado sandwich - all served with fruit and veggies on the side
We don't assign meals a specific day, but we always come up with 5 things on Sunday, make sure we have all the ingredients, and then decide when we get home each night, what to make based on how much time we have. Although we typically have pizza on Friday. This week:
Chili, Turkey and Swiss croissant roll-ups, Bowtie pasta with Turkey and vodka sauce, salsa chicken, pizza

yesterday - roasted chicken and potatoes, greek salad
tonight - mushroom paprikash (trying a new recipe from vegetarian times) either over rice or egg noodles, sauteed chard
tues - salsa chicken in the crockpot, will be used on tostadas w/smashed black beans
wed - slowcooker lamb & guiness stew
thurs - sweet potato/black bean/chorizo hash with eggs
fri - yeasted waffles, fruit, turkey breakfast sausage

I keep a huge clamshell package of spring mix and spinach that is prewashed in the fridge. Makes salads super easy not cutting or washing.
