  • Tonight is slow cooker pot roast with potatoes and carrots

    Tuesday is lemon cod with baked potato and a veggie

    Wednesday will be chicken piccata with a veggie and mashed potatoes....wow we like potatoes!!

    Thursday something with ground beef but not sure yet, maybe tacos

    Friday, we usually get take out!

    Eta: oh, I've never made a casserole. Is that weird?

  • Monday: ranch burgers, new potatoes and green beans

    Tuesday: salmon, wild rice, broccoli

    Wednesday: day off

    Thursday: chicken and rice casserole with broccoli or peas and salad

    Friday, sat, sun... Not exactly sure, but quesadillas one night, homemade GF pizza one night, my parents house one night

  • This week's looking dismal, I need to get to the market, stat! Planning is tough when you don't have any food, LOL!

    Tonight:  Some freezer meal due, to DD's shortest nap ever. 

    Tues:  Crock pot salsa chicken and either sugar snap peas or green beans

    Wed:  Beef Quesadillas with green peppers, sharp cheddar, and chunky salsa

    Thurs: Alfredo cheesy pasta bake with spinach (I'll post the recipe in a little bit) and salads

    Fri:  Something Italian.  Probably goulash.  With salads and bread sticks.  Mmmm...I wish we were having that tonight!

    Sat:  Dinner with ILs, taco night!

    Sun:  Dinner at my parents

    Wow, really??

    I never used to make them at all, ever, when I worked.  But since DD was born, they are a go-to for me since I can throw them together while she naps. 

    They're especially valuable for me when she is having a crabby day, and DH isn't going to be around to entertain her while I cook dinner, it's great just throwing a pre-made casserole in the oven!

  • We have been trying not to eat out as much. I am not a crafty person but made a menu board to help plan meals. We have done pretty well the last few weeks.

    Tonight crockpot beef stew, salad, rosemary bread

    Tuesday breakfast for dinner baked French toast, egg and spinach casserole, fruit

    Wednesday and Thursday I work nights so they are leftover nights.

    Friday baked ziti with spinach, peppers, tomatoes, and Gouda cheese and salad.

    Saturday potato leek soup and salad

  • I have a full week planned! (only because my parents are here...)

    Tonight - casserole from my freezerand....some frozen veggie

    other meals (not sure what I'm fixing when):

    Baked chicken, skillet potatoes

    Coconut shrimp and sweet potato fries

    Spaghetti

    eating out

    I don't know if this qualifies as easy (and I know it's not healthy), but this is the casserole we're eating tonight:

    1/2 package noddles (I used medium shells)
    1-2 lb boneless, skinless chicken (I used breasts)
    1 sleeve Ritz crackers, crushed
    1 stick of butter
    1 can cream of chicken soup
    8oz sour cream
    Poppy seeds (I didn't have any - it tastes fine without them)
    1 cup shredded cheddar cheese

    Preheat over to 350*. 

    Boil the chicken until done and chop it up. Boil noodles as directed. When chicken and noodles are done, mix cream of chicken, sour cream, noodles, and cooked chicken in large bowl.

    In a greased 9x13 pan, pour the mixture in, top with cheese and then pour cracker crumbs over top. Melt 1 stick butter and pour over crackers. Sprinkly poppy seeds on top. Bake at 350 degrees for 30-40 minutes or until golden brown.

    My MIL suggests adding a little chicken broth if the sauce is too thick, and adding Velveeta for flavor.

    I don't know what we'll eat when, but this week's menu shall include pork chops, white bean chili, beef stew, and salmon.

    I don't know what we'll eat when, but this week's menu shall include pork chops, white bean chili, beef stew, and salmon.

    mmm, white bean chili! I always forget about making white bean chili. Now I want some. :)
