So we'll have a waterproof mattress, and then there's a mattress pad, regular fitted sheets, ultimate crib sheet, and also these little sheet savers that only cover a small part of the mattress. I know we don't need all of this - which ones? what do you use together, and what would be redundant?

We just have the mattress (the outer part is plastic), a quilted mattress cover (thin, not puffy) and a sheet.
The number of times I've had to change the sheet in the middle of the night...seriously not more than 2 or 3 times in DS's 21 months. All that layering is not worth it IMO. Simplify!

Ditto the simplify advice! The very few times I've had to change DS's sheets because of a leak, I didn't find the leak until the morning so it was easy enough to change the sheet and pad then. I do have 3 sheets and 3 thin mattress pads so in the chance DS has leaks two nights in a row and I haven't done laundry yet, I still have a back up. That has actually happened to me before.
We used the Naturepedic Waterproof Mattress Cover on the mattress with a regular sheet on top and our son had a number of accidents and the mattress cover did it's job! I only had one mattress cover so if it happened during nap/nighttime (versus when they first wake up), I would just put a receiving blanket over the mattress cover area that was wet and whip over a new sheet and then clean it all when he got up. I think you will need just a good waterproof mattress cover and you should be fine!
