DS is all about beans right now. He loves black or pinto beans. I rinse them to get rid of some of the salt and he will eat them plain. Good source of protein and fiber. He eats them with cheese, in quesadillas, or little burritos.We haven't had any diaper-related consequences to his love of beans, thank goodness.
He is also on a scrambled egg kick. I'm glad he's enjoying more protein, as he is not a meat eater.
I pack lunch for DH and I every night, so when I started sending in lunch for my little guy at 7 months, I just started making him the same thing that I send in for DH and I. It's much easier on me. Here's our lunch plan for next week:
M - Hummus sandwich with salsa and cheese, tomato soup, apple slices
T - 1/2
of a grilled cheese sandwich, hummus and broccoli, orange slices.
W - Chicken stuffed with black beans and corn, apple slices, pretzels with hummus
R - pepper steak with rice and broccoli, blueberry muffin, apple slices
F - Chicken with rice, crackers and cheese, apple slices
English muffin pizzas, grilled cheese, whole wheat pasta with marinara, quesadilla, veggie nuggets, omelet with veggies, leftovers
What are veggie nuggets? I am intrigued.
Just frozen nuggets, but made of spinach and cheese (I think) instead of chicken. Seems slightly better for him than actual chicken nuggets. I use them when I'm in a pinch for time and just need something quick.
