I am following my meal plan. My sugar was a little high 2 hrs after lunch 155 after eating only 3.5 carb choices with protein, then normal after dinner with 4 carb choices. 2 hours after dinner I had my snack and ate apples and peanut butter and may have eaten a little too much 2 medium apples with peanut butter and this morning my fasting was 280.
Any suggestions? I am trying so hard and feel like I just can't stay controlled

How many carbs are you supposed to have for night snack? Apples have a fair bit of sugar so 2 might have been pushing it. It would be 4 carb choices (60grams of carbohydrates, depending on the size).
One thing you can try is waking in middle of night to test then test again in morning to see if your morning number is a lot higher than middle of night number. If it is a lot higher than it's likely hormonal. If it is high in middle of night and about the same in morning it may be more related to your snack.
280 is a HUGE number, I would contact your OB/MFM.
My bedtime snack is supposed to be 1 milk, 1 carb, 1 protein. I normally have a serving of regular full fat ice cream and a string cheese. I personally do much better with regular fat/full fat items as part of my overnight snack as it helps sustain my blood sugars better (I drop in the middle of the night & surge in the AM).
