My dd is 11 mos and She isn't crazy about vegetables. What are some good easy lunch ideas I can give mil when I go back to work. I've been giving her fruit and toast and Mac n cheese sometimes.
What about canned salmon?
We don't do much with veggies at lunch. We've done pears, apples, strawberry (hated), blueberries, cheese cubes and a lot of leftover dinner stuff. I know a lot of people have done rice cakes or toast with hummus. Homemade mac'n cheese is really easy and you can sneak veggies into that.
I would buy "Deceptively Delicious" by Jessica Seinfeld it's all about sneaking veggies into "good" stuff. Also gerber makes veggie puffs and my DD loves them. The store brand is just as good too.
My son likes canned salmon or tuna patties (I usually fry without oil or bake, so they are softer). We also make lots of shredded veggies into pancake form. Shred zucchini, mix in a little Bisquick, and pan fry. I make them small and thin, so I can just easily rip them into pieces. I do the same with sweet potato and carrot.
His current favorite is tofu chunks (plain or stir fried with seasoning) and canned beans.
Besides everyone else's suggestions, he also eats hard boiled egg pieces, steamed (french fry shape) sweet potatoes, sandwiches made from Flat-Out wraps (thin like a tortilla, but softer), wheat bread with laughing cow cheese wedges, cubes of lunch meat, etc.
