Yesterday was meat pie and leftover mashed potatoes.
Tonight I don't know. I have chicken breasts in the fridge, so I will probably sautee them with veggies.
Then tomorrow, ummm... we have ground beef and pork, so maybe meatballs or something.
Thursday... gah no idea.
As for simple side dishes, how about scalloped potatoes? Or sometimes, I will do one of those Uncle Ben's Fast & Fancy pouches of rice, but throw in a ton of veggies.
You can also change it up a bit in the mashed potatoes department by adding other veggies to it. Make pink (orange) mashed potatoes by mashing carrots with them. Or green with broccoli...

Have you tried using the food processor to make your mashed potatoes? Maybe a smoother texture would be more appealing to your DD? Or maybe it's the opposite and you could try to just fork-mash them?

Wed: Pasta, cheese, spinach casserole bake
Thurs: Maybe chicken/rice/cheese enchiladas. If I'm feeling brave, first time making this
Fri: Steak? and...something
Sat: Maybe crock pot mac n cheese. Depends, not sure of our Saturday plans.
Sun: Dinner with my parents

Monday: beef enchiladas using GF sprouted brown rice wraps
Tuesday: from scratch chicken and wild rice soup with extra veggies and GF bread Brie cheese grilled cheeses
Wednesday: night off!
Thursday: meat loaf, salads, peas, sweet potatoes
Friday, Saturday, Sunday not sure yet.
Easy side dishes: small red potatoes and green beans, sauted with olive oil, S and P, and onion in chicken broth.
