I am not the best cook, but I am wondering what type of meals these are? Everyone is telling me to get freezer meals made now and I honestly have no idea what that means?? Freezer meals to me were always lean cuisines, frozen pizza, and so on. Any good recipes?
Re: freezer meals?
This. My sweet MIL is actually making some freezer meals for us to have once the baby is here. She lives 5 hours away and has been texting me asking me what I like. It will be nice not having to worry about dinner each night when the baby arrives.
I started on this today! I made lasagna and chicken enchiladas. I have also bought a couple of pork tenderloins that are already seasoned and ready to thaw and cook. I still plan to make other things like a few casseroles, stuffed bell peppers, maybe season some chicken breast to cook. I also froze a few leftover soups and gumbos we made this winter. I will be making some breakfast burritos for DH when he returns to work from paternity leave. And I will prepare some chocolate chip and white chocmacadamia nut cookie doughs to freeze for when I want something sweet. Banana bread is my FAVE, so I have 2 large loaves in the oven right now and will wrap and freeze those. My goal is to have enough meals for at least two weeks. I have begun stalking the grocery store ads watching for canned and frozen veggies and meat to stock up on, so that if we need to go to the store, it will just be for fresh produce and dairy products.
DH spent several hours this past weekend cooking-up some pasta sauce from scratch - chock-full of vegetables (pureed) - and we threw in some bacon and leftover BBQ chicken. He also did a pesto from scratch, and we threw all the portions into containers for freezing. He figured it would be easy to thaw and add to pasta (which is easy enough to "cook").
We also figured that one-dish meals would be the easiest to prepare/eat during those first few weeks. So that would include pastas, lasagna, etc. where we don't have to put together multiple items to make a whole meal.
Good luck!
I made very simple things that DH will be able to simply dump into the Crock Pot or put in the oven. Nothing fancy, just better than getting take out every night (DH would get pizza every night if he could).
I made a couple lasagnas (so simple to put together, and I got a bunch of glass freezer containers that can go right into the oven, once defrosted), pasta sauce with sausage in plastic containers (DH will just have to make the pasta), and the rest are all easy Crock Pot recipes I found on Pinterest. I chose ones that had all of the ingredients (meat and veggies) and sauce included. I put these in plastic freezer bags, which we will take out the day before and defrost in the refrigerator. I stocked up on a lot of rice, so I figure we'll just make a pot of rice to go with each Crock Pot recipe. Some were shredded chicken or pulled pork recipes, so those we'll just eat on rolls.
