NBR: Need some vegetarian appetizers

I'm planning a small party for my son and need some very easy vegetarian appetizers. Something very quick and easy.  Any suggestions?

  • Okay, then here is a good / fun one that I make all the time:

    Buy a tube of pillsbury crescent rolls and spread out as one sheet; bake according to instructions.

    Spread a mixture of cream cheese / mayo on top as the "sauce" then top with diced up veggies -- I like to shake some dried dill on there, then top with mushrooms, black olives, broccoli, carrots, and tomato. Cut into squares.  Serve cold.  Veggie pizza!

    If there will be adults -- I love baked gouda.  Use another can of pillsbury rolls, place a wheel of gouda in the middle and wrap the cheese with the bread; bake until bread is brown cheese is melty.  Delicious.

    Pinterest will have tons of good ideas.

  • What about a black bean and corn salsa served with chips? 

    Grapes on skewers

    Can't go wrong with kids and cheese + crackers

  • Tortilla wraps (plain or flavored)

    2 packages cream cheese and a packet of ranch dressing or onion soup/dip mix (mix them well together)  or you could just buy like the chive and onion cream cheese.

    spread a thin layer of cream cheese on tortilla, top with any veggies of your choice (my favorites - spinach, diced tomatoes, diced carrots, cucumber). 

     Roll up and place in fridge for 30 minutes or so.   Slice.

    You have little veggie wraps things. 

     

    I also like to buy breaded ravioli or tortolleni's.  Bake and serve with marinara.

    I also love making a mango strawberry salsa for chips.   I use mango, strawberry, a splash of lemon, lime or orange juice, cilanto, onion and a splash of balsamic.     SOOOO Freaking good.

  • I also like to make stuffed mushrooms, but my favorite is making little mozz caprese bites. Cut up the bread and place a little peice of basil, fresh mozz, and tomato on top
