Hi there!
We have 2 bday parties coming up, and since DD can not eat the bday cake, I plan to bring a cupcake for her. Unfortunately, I work full time and don't have a lot of free time to experiment with recipes. Ideally, I'd love to use a store bought cake mix, but am not sure what would be good to subsitute the eggs with. Any advice? Thank you!
Re: What's a good subsitution for eggs when baking?
Sub Applesauce for cake mix.
For brownies omit the oil and eggs and add 1container of plain yogurt and the water the recipe says.
1/4 cup applesauce = 1 egg
1T ground flax + 3T water = 1 egg
Those are the subs I use, and they work really well.
DD1: allergic to eggs & dairy
c/p 4/1/11
DD2: milk and soy protein intolerant, allergic to eggs, soy, peanuts, tree nuts, sesame, bananas

For stuff from scratch I use the flaxseed mentioned above,
for cake mix I use a 12 ounce can of soda with the mix. Google weight watchers cake recipe and it tells you how. No water, eggs, oil etc just the can of soda. I also made a cake mix with 1 container of vanilla Greek yogurt and water. Both came out great and easy.
Just FYI I keep frozen cupcakes in the freezer for dd so we aren't always making cakes"
