Balsamic Chicken - really good. got this from another bumpie who no longer posts recipe suggests serving it with pasta. i prefer potatoes or cauliflower
Garlic and Brown Sugar Chicken - this wasn't as good as I wanted it to be, but maybe it was because I think my chicken got over cooked and really dried out. I served it with rice and broccoli
Santa Fe Chicken - I am making this tonight for the first time! I'll either make rice and/or serve it with tortillas and maybe add salsa, avocados, cheese, sour cream, cut up tomatoes, cilantro, etc...
OP - if you are on Pinterest, there is a treasure trove of crock pot recipes there. (Or I find it really useful to pin all the crock pot recipes I find - I have a special crock pot board.) Yes, Pinterest has turned into a giant time suck for me, but I love it (in a very useful way!) for recipes (slow cooker and non).
One of my favorites is a "cheater" version of the Santa Fe chicken. I put four chicken breasts, two jars of mild salsa, a can of black beans and a can of corn into the crockpot. Then I shred the chicken and serve it over rice with sour cream. We use the left overs later in the week as taco meat. It's delicious and super easy!

Dump jar of 505 green chili on pork tenderloin in crockpot. Cook on low all day. Shred meat for tacos. I like to use tortillas and top with lettuce, cheese, avocado, etc
Crock Pot Chicken Terriyaki:
1lb chicken (sliced, cubed or however, I like to use thighs), 1c
chicken broth, 1/2c terriyaki or soy sauce, 1/3c brown sugar, 3minced
garlic cloves
Dump in crockpot. Cook all day. Serve with rice and stir fry veggies

4 boneless skinless chicken breasts 1 cup BBQ sauce I LOVE Sweet Baby Rays 1/4 cup brown sugar 1/8 cup lemon juice fresh or from a bottle 5 small apples peeled and chopped, I used gala 8 slices bacon
In a small bowl, combine BBQ sauce, brown sugar, lemon juice and peeled/chopped apples. Wrap each chicken breast with two slices of bacon and place in a greased slow cooker. Pour BBQ-apple mixture over chicken and cook on low for 6-8 hours or until chicken is done.
Slow Cooker Chicken and Wild Rice Soup
Ingredients:
4 1/2 cups chicken broth 2 cups water 2 boneless, skinless chicken breasts 1 package of Rice-a-Roni long grain and wild rice 1/2 tsp salt (plus more to taste) 1/2 tsp pepper 1/2 cup all purpose flour 1/2 cup butter 2 cups half and half (I used fat-free half and half) 1 cup grated carrots (I diced mine) 1 cup diced celery
Directions:
Combine broth, water, carrots, celery, chicken and rice (along with seasoning packet) in a large slow cooker. Cook on low for 6 hours or on high for 4 hours. Take out chicken and shred with two forks and then add back into slow cooker. In a small bowl combine salt, pepper, and flour. In medium saucepan over medium heat, melt butter. Stir in flour mixture by tablespoon to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Stir cream mixture into slow cooker and then let cook on low for 15 more minutes.
Slow Cooker Cilantro Lime Chicken
Servings:6 Ready in:6 hours, 15 minutes Ingredients: 24-ounce jar medium salsa Juice from one lime ?cup fresh cilantro, chopped 1.25-oz. package taco seasoning 2 jalapeno peppers, finely chopped (optional) 6 boneless chicken breast halves, defrosted
Directions: In a slow cooker, mix together the salsa, lime juice, cilantro, taco seasoning and jalapenos. Add the chicken and coat with the salsa mixture. Allow the chicken to cook, covered, in the slow cooker on Low setting for 6 hours. Serve chicken with salsa mixture spooned over top, or shred and use as a taco filling.
