I bought DS the Dr Praeger's veggie bites and he looooves them. I am balking at two things - they are processed, and they are expensive. I would love a recipe for muffins that are heavy hitters for veggies, just as an "extra". If I make a family size bag of frozen steamables, between the three children they are gone. I need ideas for other veggie things like the bites or muffins. Also open to savory muffins kids will eat - the girls are not big on meat.

I make these once a week/every two weeks if I do a double batch. DD and I both bring them for breakfast. They are tasty. I will admit that last time I made a batch for her with less sugar and a batch for me with more sugar (like 1/2-3/4 cup, she only got 1/4 cup). Sorry honey, mama needs some sugar! I do freeze them in a ziploc and just pull them out the night before. They freeze extremely well.
I have used any combination of veg I can think of, subbing zucchini for the carrots, applesauce for the banana, even yogurt for the butter (I forgot it at the store). They've always been good. And if you can't find oat bran, check in the hot cereal section.
