need chicken help!

I am making chicken fettuchini alfredo for dinner tonight, but every time I bake the chicken ( instead of grilling outside, which is not an option right now, with all the snow) its is really dry and tasteless, even after I marinade it. Any other suggestions for cooking chicken to put in the alfredo, that wont make it super dry? TIA!

Re: need chicken help!

  • I usually just cook it on the stove.  Just throw it in a skillet.  I don't use any oil or anything.  It always comes out so much more moist that way!

It doesn't stick to the pan?
  • Keep it wet the whole time it is cooking, like you would if you were grilling it.

Nah.  I keep it moving the whole time and it comes out fine.

  • cool - thanks :) Congrats on your BFP by the way, I missed your announcment!
  • I know that you have probably already cooked but I bake chicken - even if I am doing alfredo (DH does it differently) but I actually drizzle olive oil and massage it in a little.

DH cuts up the raw chicke and puts it into a frying pan (uses PAM) and then after the chicken is cooked he adds the alfredo sauce to the pan with the chicken...  It never comes out dry.  just for future ideas

  • i like to pound the chicken before cooking so that it is even thickness. i haven't had dry chicken since then because it cooks evenly.
  • You can make little slits in the top. That always helps it come out real juicy.

  • This is an easy & yummy baked chicken. You could serve the fettucini alfredo on the side.

     Preheat oven to 400 degrees

    • Lightly coat (use a pastry brush) chicken breast on each side with olive oil. Season both sides with fresh ground black pepper & garlic salt
    • Dredge chicken breasts in Italian bread crumbs
    • Bake 20-25 mintues (depending on thickness of chicken breasts).

I often throw in some grated parmesan in with the breadcrumbs.

Otherwise, I suggest cutting it into small pieces, seasoning it and cooking it in your sauce.

     Buon Appetito!

  • Thanks everyone for the helpful hints. It turned out really good. I can't wait for DH to come in from snowblowing so we can eat it!
  • If you pound the chicken and then pan sear it that will hold in the flavor if you want to throw it in the oven.
