Making anything special for dinner tonight?

I usually make something nice for Vday's dinner, but DH will be working late tonight.  I'm in the middle of brainstorming something nice that can sit on the stove/oven and not spoil when I make it early for C and I.  Maybe some sort of cheesy pasta bake?  Any ideas out there?  What are you guys making?

  • I plan on making parmesan chicken with asparagus.
    I'm not sure if pasta will keep well sitting in the oven/on the stove. Would it get crusty? How long will it sit?

  • I'm making chicken schnitzel, roast potatoes and Caesar salad.  Not a good option for you.  I find slow cooker meals work best for that kind of situation.  I feel like the cheesy pasta bake would have to be re-heated to be good for your H.

  • I'm making Ina Garten's Spicy Turkey Meatballs. They are so good and reheat well. The ingredients are a bit expensive but it makes a lot and you can freeze the leftovers.

  • We are just having meatball subs for dinner with pasta. Nothing special. We are going out to dinner this weekend. 
  • I made this the other day... It was amazing and it reheated really well. Plus it was actually a really quick and easy recipe. The sauce looks weird until you add the boiling water, just a warning.
    I haven't thought about what I am making yet because we celebrated last night, probably making Tacos as DH is working late tonight too

  • I'm making steak, homemade Mac and cheese, roasted Brussels sprouts, and sour cream and cheddar biscuits. I'm also making red velvet cupcakes for dessert.

    Apparently I am also trying to gain the rest of my pregnancy weight tonight. Lol.

  • I suggest making risotto.  It seems fancier than it is, can sit on the stovetop and be reheated as necessary, and little hands are helpful for stirring.

  • I'm making soup for spicy and bringing it to her tomorrow so I'm making a giant pot and that is what we are having. Nothing special here.

  • DH took the day off to day to prep the apartment for his parents' visit this weekend. So he volunteered to do the shopping and make dinner tonight. He was thinking of steaming crab legs.

    Unfortunately, I just checked in and he's still asleep. I don't have high hopes. We'll probably have chicken salad.

  • I'm making filet mignon steaks with mashed potatoes, sauteed mushrooms  and chocolate dipped strawberries.  You can always make a fresh steak for YH when he gets home and serve with reheated sides.

  • I have "jamaica-me crazy chicken tropicale" in the crock pot. It has sweet potatoes, pineapple, golden raisins, and water chestnuts, along with chicken breasts rubbed with jerk seasoning and all covered in a pineapple juice, Worcestershire sauce, ginger, cumin and onion sauce. I can't decide if it sounds good or terrible, but I made enough of it that we will have it several times.
  • We are having steaks, saut?ed  green beans, and fresh bread. It is nothing too special but it will be yummy!

  • Great ideas, ladies!  Thank you so much for your input!!  I might steal the idea of making something seperate.  Crystal, he's allergic to coconut and tree nuts, which really SUCKS.  That recipe sounds delish.
