Hi everyone! I am looking for some lunch/snack ideas that are in the low carb arena.
I'm doing a modified Atkins with doctor supervision and am really struggling with lunch and snacks...salads are going to be boring if that is all I can come up with for lunch!

Hummus and carrots
Hard boiled egg
Plain Greek yogurt and berries
Fruit salad
Tuna and avocado lettuce wraps
Black bean, tomato and avocado salad
Cherry tomatoes and ranch dip
Chopped chicken breast salad
Pizza made with a baked cauliflower crust
Chili
Edamame
I try to eat low carb at lunch, and I usually do end up having a salad because I can get so many veggies in there and I feel good the rest of the afternoon, especially if I have some grilled chicken or egg, too.
Otherwise I do lots of broth-based soups packed with veggies, Greek yogurt, apples and peanut butter, any type of sandwich fixings in a low-carb wrap. I don't count carbs, but I know what has lots of carbs and what doesn't. If I stick with eggs for breakfast, and these items for a typical lunch, then I add in some healthy carbs at dinner - baked sweet potato or some whole grain rice, etc.
