The house was in semi-decent shape last night when we tackled our 30-minute challenge, so I focused on tonight's dinner. We are having creamy pesto chicken and I am seriously way too excited about it. I need a life or something.

Well, if you haven't eaten yet, there's plenty left
Certainly:
Ingredients
2 chicken breasts cut in strips
1 onion, finely chopped
2 bell peppers, chopped
2 cups broccoli florets
3/4 cup chicken broth
1/4 cup heavy (35%) cooking cream
1/4 cup cream cheese
1/4 cup pesto
Directions
1 - In a large skillet, cook onions over low-medium heat for 2 minutes, until translucent
2 - Add chicken strips and cook for 5 minutes
3 - Add chicken broth and vegetables
4 - Cover and simmer on low heat for 5 minutes (personally, I held off adding the broccoli because I'm not a fan of it being too smooshy)
5 - Add the remaining ingredients, bring to a boil, then uncover and let simmer for one minute.
6 - Serve over rice or pasta.

We had pancakes (for pancake Tuesday). This is after I spent all morning helping prepare pancakes for all the students and staff at school. I'm so pancake-d out!
