Directions

The Caprese salad is similar to what I would have, but mine's closer to part of a greek salad:
Diced tomatoes, diced cucumbers, and crumbled feta, drizzled with EVOO and add salt, pepper, dill and a bit of oregano to taste. I could eat this for days.
Lately I've been loving frozen edamame as a snack! Just heat in the microwave with 1/2 cup of water for steaming and add a dash of salt. Delicious and nutritious!
