DD still takes a catnap around 5:30 and goes to bed at 7:30 without issue.

What time is your LO getting up? I would like our LO to stay in his crib til 8am - I'm not an early riser. He has been going to bed around 9pm and he gets up anywhere from 8-9am - I'm afraid that if I move his bedtime up to 8pm - that he may start getting up earlier?
There's no specific time that's right. If your LO is tired and wants the sleep, keep giving the 3rd nap unless it's keeping him up past the bedtime you want to establish. If he starts to drop it and doesn't seem overtired by bed time rolls around, don't push the nap on him. The third nap, IMO, is based much more on being in tune with your LO's sleep cues than any other time of day.
