As most of you know, I have a small catering business that I work as a side job. I mostly do showers and birthday parties, with the occassional larger event. I found out this morning that I won a bid to cater my first wedding. It's very small, only between 40-50 people, but it's a great opportunity to possibly grow the business and expand into the wedding market.
I'm presenting a tasting to the couple next month, and they have requested a seafood dish. Seafood is my weak link. I can cook it, well, but I don't like it. I've tried probably 20 different types of fish, all with this reaction:
I've settled on pancetta-wrapped scallops in a white wine sauce, because I think they're classy, and they're probably one of the easier seafoods to cook in bulk without running the risk of drying out. My question is, what side dish would you be looking for if you were to order the scallops?

I think corn and scallops go really well together - you could even do a fancy creamed corn.
Asparagus is also nice if you want something lighter.
Ditto the asparagus from PP, also maybe a rice pilaf?

I like the asparagus idea. I'm not using that in anything but the appetizer spread, so that's good. I love making risotto, but I'm pairing that with the chicken option already.
Here's what I'm thinking:
Pancetta-wrapped sea scallops in a white wine reduction, paired with whipped creamed corn and an asparagus and root vegetable medley (probably jicama and carrots)
I'll do some experimenting next weekend (lucky FI) and post some pics!
Risotto and a root vegetable. Scallops are delish.
ETA: Just read that you're already using risotto for another dish. Pilaf? Or is that still too much rice?
I am a big Chef Gordan Ramsey fan and my first thought was risotto because Ramsey seems to always pair the 2, but I like your choices! I don't like seafood either, but it SOUNDS yummy!!

Howsabout we scrap the scallops and replace them with pecan crusted chicken. No spinach unless it's raw and in a salad with a sweet dressing. Mashed potatoes with sour cream, cheese and bacon.

That sounds delish. Not quite what they were looking for, but now I want that for dinner.
Also, I'm thinking about pitching a baked potato bar for cocktail hour. I HATE stuffy passed horsey dovers.
