Fondue help!

Does anyone here make their own fondue?

DH and I have done steak (in oil) and chocolate (with strawberries) several times.  We are inviting one of our good friends over to have fondue to celebrate Christmas together.

She's on a low carb diet, and I wasn't sure what else to have.

I've never made cheese fondue and I wasn't sure what to dip in it?  Any other ideas or recs?

  • Mmmm, fondue. OMG I'm salivating.

     

    For cheese fondue, you should just do bread cubes and veggies. Especially good is sourdough bread and cauliflower. Oh, and green apples. YUM.

  • thanks Lauren - cauli is a good idea.  Stupid question (don't laugh)...raw cauli or cooked?  cooked right?

  • blanch all the veggies you use. :)

    Alton Brown has a good recipe for fondue.

  • You can definitely do raw, but blanching will make them lots better.

    Gruyere is perfect for fondue because it's really melty. It's pretty easy to find in the specialty cheese case at most stores. I've purchased it at meijer before.

    Another good one to do that most people like is beer cheddar.

  • I hate cauliflower, so I'm no help there.

    Gruyrere is fabulous.  Melted cheese...mmmm.....

    IMO, low carb doesn't do well with fondue.  Cheese fondue

    needs to be cooked with wine, and served with white bread

    (carbs), apples (carbs), pumpernickle (carbs), ...you get

    the idea.  Carrots and mushrooms will be good, but not

    as good as bread.

  • I know what you mean Krista...it's hard because right now she's in the "super strict" portion of the diet (ie: no carb) and it's super restrictive.  We usually eat some (usually good, not always) carbs, so it's really hard for us to come up with ideas.  Usually we'll have some form of carb for the rest of us, and let her choose not to eat it, but enough other things (veggies, meat, etc) that she isn't hungry - so that works well.  I'm thinking cauli would be OK?
  • Maybe you can do cheese fondue w/ bread & veggies, and also do some skewers of chicken.

    If she wants, she can have chicken and veggies plain, or dip in the cheese.  Everyone else can pig out. ;)

  • yum it sounds so good. last time DH and I just did steak and choc covered strawberries...so delicious.
