I'm thinking about making some for the first time and freezing them......would I freeze them raw or bake them first? If I marinate them in milk and dredge them in breadcrumbs and then freeze wouldn't that be a little messy??? TIA!
I usually cut up chicken into strips, coat in a thin strip of dijon mustard, and then use crushed cheese crackers to coat. I have used storebought cheese crackers before (like Cheezits), but usually I make my own cheese crackers for it, because they are cheap, easy, and healthier to make that way. Then I bake them. I have never frozen them, but like others I would freeze after I baked them.

When the kids were little I did. I blended chicken, broccoli, a little cheese, an egg and bread crumbs together, formed a nugget, rolled it in breadcrumbs and baked it with a little olive oil on a baking sheet.
They loved them. I did them in smaller batches so I never had to freeze. They were super easy

I cut up fresh chicken, dip in egg mixture, then dip in breadcrumbs. I either fry in olive oil or bake. Super yummy!

Yep, I would bake first. I think the coating would get all soggy, otherwise.
Btw, using panko instead of breadcrumbs (or half panko, half breadcrumbs) can make them a bit crunchier when baked. I always make my own, yum.
