dinner ideas

I'm trying to come up with dinner ideas for the next few weeks (after we move in to our house, before DH gets here).

I'm a mediocre cook at best, and I've never had to cook for just DS and I. When DH was gone in the past and I was alone, I survived off of things like potato soup, cucumber sandwiches, and chicken salad. Yeah...DS won't go for that.

Any suggestions? Besides spaghetti?

DS is semi-picky - he'll eat peas, corn, and carrots. I usually have to hide meat.

  • I'm alone a lot with L and J. Here are some of the quick dinners I make for us.

    Quesadillas, whole wheat wrap, refried beans, cheese, I cook it on the stove and serve with guacamole. This is their favorite quick dinner.

    Stirfry chicken and veggies over rice.

    Whole wheat noodles, add butter, parm, peas and chicken pieces.

    Couscous, chicken pieces and carrot sticks cut thin with ranch made with plain Greek yogurt.

  • I also have a casserole recipe he might go for. It has corn and broccoli in it and I add chicken to make it a meal. I'll look up the recipe tomorrow.

    Does he like cheese? My boys will eat spinach squares even though they don't care for sauted spinach or plain spinach. I have the recipe memorized...

    2 packages frozen spinach, let come to room temp and squeeze out juice.

    8 oz small curd cottage cheese
    4 eggs
    3 tbs flour
    6 oz shreaded cheddar
    Green onion optional, salt, pepper, garlic

    Add all ingredients, stir really well. Bake in a heavily greased 8 by 8 dish. 350 for 45 mins to an hour, let sit 15 minutes before cutting into squares.

    Crust less quiche:
    6 eggs
    1/2 cup milk or heavy cream
    3 tbs flour
    1 1/2 cups cheese shreaded cheddar works
    Add meat and veggie of your choice.
    Stir really well, bake in heavily greased pie plate. 350 for an hour.

    The boys like broccoli and ham, asparagus and bacon, I just throw in whatever we have laying around.

  • Thanks, Rachey! Those sound good. DS stopped eating broccoli by itself, but maybe if it's in something he won't notice. We actually haven't tried spinach...does that make me a bad mom? I purchased some, then never used it before we moved.

  • You're welcome!! H is at work 48 to 73 hours a week plus has school three days a week and now he's on clinical rotation. I usually only cook like one real meal a week. The rest are thrown together in five minutes like these.

    I'll look up that casserole recipe in a little bit. It's not something I throw together in five minutes, but you could get a few meals out of it.

  • Do you have a slow cooker? If not, I suggest you get one. There are some fairly inexpensive models out there (I consider ours to be a nicer one and I got in on sale for $40) and they make cooking so farking easy. Basically all you have to do is cut your meat and veggies, throw it all in there with some sort of liquid (broth, wine, whatever) and then you wait. Sometimes I prep everything in the evening, then throw it in the slow cooker the next morning so I literally have NOTHING to do come dinner time.

    Otherwise, meat loaf is one of my go-to meals. I kind of use whatever I have on hand when I make mind, but I could come up with actual ingredients and quantity for you if you'd like. I usually load mine with veggies, too :D

    I second the couscous idea. Just be careful if you use fresh herbs - DD2 doesn't like the feeling of "grass" in her mouth and spits out all the parsley unless it's chopped reallllly fine.

    Soup is pretty easy to make, too.

    Also, sometimes, I'll throw carrots and onion and celery in the food processor, then mix those up with rice and cook it all together in chicken broth. It's a great way for hiding veggies - or just upping your veggie intake :)

  • I second Rachey's suggestion of quesadillas.  They are so darn easy and you can do a ton of variations.  Just throw everything in a tortilla shell and then cook them in a lightly greased skillet for a couple minutes on each side, until the tortilla lightly browns and the cheese melts Some of our faves include:

    Ground beef (browned and spiced up any way you want) or shredded chicken with green pepper strips (I just defrost frozen strips) and some cheddar or cheddar jack cheese. 

    Crock pot salsa chicken quesadillas (see recipe below)

    Breakfast quesadillas - DD has stopped eating scrambled eggs, but if I throw them in a quesadilla with some peppers and meat (sometimes sausage, sometimes deli ham, whatever I have on hand) with a little cheese, she loves it.

  • Here's the crockpot salsa chicken.  It's ridiculously easy.  I make a big batch, and then freeze individual portions to later thaw and use for quesadillas. Makes a quick and easy lunch for DD and I.

    2-3 chicken breasts, taco seasoning, 1 jar salsa, 1 can black beans (drained & rinsed) and 1 can corn (drained). I don't always add the corn, it's good with or without.  If I have an onion and/or green peppers, I'll dice that up and throw them in first.

    Throw the chicken in the crock pot.  Sprinkle each piece with some taco seasoning.  Dump the salsa over the chicken.  Cook 4-6 hours on low (my crock pot is wonky and cooks really fast) until chicken is done.  Shred chicken and add black beans and corn.   Let cook on low for another 20 or so mins and then serve.

    It's super yummy.  DH likes to eat it alone in a heaping mess on his place, and I like it best in a quesadilla with a little sour cream.  Yum!

  • I'm blowing up your food post, LOL.  I'm thinking about what we're eating over the weekend, and coming up with ideas for you.

    If your DS likes pasta, he'll like this.

    Bring a small pot of water to a boil.  Throw in frozen tortellini and frozen peas & carrots.  Boil for about 4 minutes.  Drain, rinse and return to pot. 

    We eat this one of two ways.  Sometimes I'll just add some butter and sprinkle Parmesan cheese and serve.  Other times I'll add a little alfredo sauce (I just use the stuff in the jar) to lightly coat.  Heat on low to warm the sauce and then serve.  This is one of DD's favorite lunches.
