Unfortunately MOST of the time--probably about 80% of the week, my DH & I eat dinner after Reese is in bed. My daughter wants to eat around 5:15-5:30 (my husband isn't home yet until usually 7) and she wants to be in the crib around 6:45-7pm. So right now, dinner as a family just isn't feasible most days of the week.
Because of that, I feel like I have no idea what to give her for meals at dinner. We don't always have leftovers for her, and she has an egg allergy so some of our dinners aren't suitable for her.
I seriously suck at making healthy dinners for her. Dinner is also her least favorite meal--usually she just picks at it. (She eats amazing at breakfast and lunch).
I need some ideas!

Whole wheat pasta with red sauce
Edamame in a stirfry with broccoli my kids love "trees" over soba noodles or rice.

Pasta is quick and easy. Instead of tomato sauce, i'll toss it in olive oil and add some veggies.
Could you make crockpot meals? Have them ready at 5 for your dd, then rewarm them just before your dh gets home.
