Quick-go to dinner ideas?

Unfortunately MOST of the time--probably about 80% of the week, my DH & I eat dinner after Reese is in bed. My daughter wants to eat around 5:15-5:30 (my husband isn't home yet until usually 7) and she wants to be in the crib around 6:45-7pm. So right now, dinner as a family just isn't feasible most days of the week. 

Because of that, I feel like I have no idea what to give her for meals at dinner. We don't always have leftovers for her, and she has an egg allergy so some of our dinners aren't suitable for her.

I seriously suck at making healthy dinners for her. Dinner is also her least favorite meal--usually she just picks at it. (She eats amazing at breakfast and lunch).

 I need some ideas!

  • Could you double dinners you make for yourselves, and then freeze them in toddler sized portions? The egg free ones, of course.

  • My kids like to roll stuff in a fajita I fill with salsa and cheese, black beans and rice, turkey.

    Whole wheat pasta with red sauce

    Edamame in a stirfry with broccoli my kids love "trees" over soba noodles or rice.

    Imagine that my phone didn't eat my punctuation please.
  • you could always give her dinner at lunch time and a sandwich or something she really likes at dinner. tonight ds had oatmeal

  • DS loves blackbeans and rice. Sometimes I add a little cheese and roll it in a flour tortilla.
    Pasta is quick and easy. Instead of tomato sauce, i'll toss it in olive oil and add some veggies.

    Could you make crockpot meals? Have them ready at 5 for your dd, then rewarm them just before your dh gets home.

  • Any kind of pasta? You can mix it up with sauces, flavors, add chicken or meat. You can always pur?e veggies to hide in the sauce as well. Make bigger batches of the sauce, freeze and have it ready to go whenever you may need it.
