I cannot find a veggie that my guy likes to eat--he's a pretty picky eater in the first place. Any suggestions? I just want to make sure he is getting the nutrition that he needs!
Do you ever have your DS help you make meals? My kid loves to do this and as a bonus, he eats anything off the cutting board. He'll eat raw green beans, brussels sprouts, etc. that he may or may not eat once they actually hit his plate. :P
My kid likes vegetables that are crispy, which means I either serve him raw stuff like cucumbers, tomatoes (I know it's a fruit, whatever), slaw mix or I roast vegetables, or I'll blanch them and then do a quick saute with butter or oil. Like for example tonight for dinner I boiled whole fresh green beans for ~3 minutes, drained, and tossed with a little butter, s&p. He likes that they are whole and still crispy, and he ate them up. If you try to steam or boil anything, he's not a fan (just like his mom. )
If he still won't eat them you can always try hiding them in things, like pureeing into a spaghetti sauce, making a green smoothie, etc.
Are you offering them straight up or in things. I just saw a post on facebook about a broccoli fritter recipe that was well received by kids. I just made cauliflower gratin last night, which went over like mac n cheese with DD. She also loves zucchini cornbread pancakes and veggie soup (especially when she can help put the veggies in the pot after I chop them up, and then stir it occasionally).
I'm going to start daily smoothies that incorporate veggies and fruit. Have you tried to "sneak" them in when you make dinner/lunch such as mix them in the main dish. DD is pretty picky as well and I've had to get creative.
The dip suggestion was good, my son also likes to eat with chop sticks or tooth picks.. He loves edamame because he can get the "seeds" out himself.
My DS will eat alvacdo like its going out of style.. I am a fruit/veggie juicer, I started juicing kale and mixing it in his orange juice recently. He can't really taste it.

dd will still only eat certain veggies on their own
for others I chop it up & add it to food (like grated zuchinni in eggs)
or I puree and bake it in foods (jessica seinfeld cookbooks are great for ideas) or just google recipes
