i like to throw a package of Lipton garlic and Herb seasoning over it and bake it in the oven. i usually serve it with rice and a veggie. the leftover sauce tastes good over the rice
3 tbsp peanut butter
3 tbsp soy sauce
1 1/2 tbsp honey
3 cloves minced garlic
1 tsp ground ginger
2 tsp hot sauce
1/2 cup chicken broth
8 oz noodles (I used spaghetti)
Shaved carrot slices
Chopped Cilantro
Crushed peanuts
Fill a medium saucepan with water for the noodles and add noodles once water is rapidly boiling. Follow package directions as to how long to cook noodles. In a small saucepan over medium heat, mix together the peanut butter, soy sauce honey, garlic, ginger, hot sauce, and chicken broth until peanut butter is melted and all ingredients are combined well. Drain noodles and place them in a medium sized bowl. Add in spicy peanut sauce and mix well. Plate out noodles and add the carrots, cilantro and crushed peanuts.
For chicken, I cut it into small strips and I toss it in Panko bread crumbs, garlic, cilantro, and some crushed peanuts. Then I bake it, and plate it on top of the noodles.
toss it in a ziploc bag with some oil, vinegar (balsamic, white/red wine, etc), salt and pepper and whatever herbs you have in the fridge or cabinet. If you have lemon juice, add that too.
Bake or grill.
I do something pretty similar - rice wine vinegar, soy sauce, minced garlic (fresh is better, but I've used dried), minced ginger (or dried ground ginger if I don't have any fresh), a dollop of honey, salt, fresh ground black pepper, and sometimes dried orange peel. Mix and match the ingredients until it smells good, then toss in the chicken breasts. Let it marinate in the fridge for 30 minutes on each side, then bake, broil, or grill.
I made this last night with chicken breast instead if sausage. I just chopped up the chicken and seasoned it with salt & pepper before throwing it in the pan. So good.

This is going to sound stupid but how do you shred chicken?

I typically boil it if I'm short on time. Crockpot it in the bbq sauce if I have longer. Often it'll fall apart on its own in the crock pot.
For boiling, I just rip it apart once it's cooked. I may do it wrong.
