Rocco is picky, picky, picky. Only the food pouches and these veggie snack things that come in a canister are the veggie-like things he will eat. Luckily I still BF so maybe that helps with his nutrients, but yeah. Not good.
Chopped veggies in pizza and pasta sauce, Greek yogurt fruit and veggie smoothies, I also cut sweet peppers and green peppers into strips, she loves the crunchiness.
ETA: Also, if you make a big sheet ban of roasted veg, you can throw your uneaten bits into a pot, add chicken broth (or veg broth) and buzz it up with an immersion blender (or put into a regular blender). This makes a kickass soup that is already seasoned!
She's not picky except about green veggies. Surprisingly, she actually eats them more if I give her them raw and not part of a meal. While I'm cooking, I'll wash something like a green bean and give it to her and she'll gnaw on it while she plays in the kitchen. Also, we discovered that she likes them in soup, like broccoli cheddar soup. I keep meaning to start doing veggie smoothies, but I've never made a smoothie and don't know where to start.

CK has become VERY picky, and she used to love any and all veggies! She loves quesadillas, so that's typically how I'll sneak in veggies AND meat (she doesn't like meat). Also, Target recently came out with freeze-dried veggies, like peas, corn, and edamame. Usually she'll eat that (probably the crunchy aspect) if I give it to her as the first part of her meal.

They're super easy! I just throw a banana, whatever other fruit I have, yogurt, a handful of spinach or broccoli and cauliflower, ice, a splash of milk and if its plain or Greek yogurt I put A small amount of Hershey's syrup or something to sweeten it. You could skip the milk and sweetner and use V8 fruit juice. For E and myself sometimes Ill throw in a candy cane or cookie and just do banana, milk, veggie and ice.i also bought a kids protein powder at a health food store. We can't do peanut butter.
DS is a pretty good eater but he doesn't always want to eat his veggies. If we mix his veggies with some ranch dressing then he just mows them! I realize Ranch isn't the healthiest thing but eating his veggies is important enough to me that I think the bit of extra fat is worth it.
DD will eat pretty much any veggies in soup, so I tend to make a lot of soup. She also loves roasted broccoli with a little olive oil, salt and pepper.
Just read this whole thread to my husband so he can try to get more veggies in our kiddo during the day. It's so hard when we aren't big veggie fans either. Thanks for wonderful suggestions, ladies!
