Butter both sides and I dash garlic salt on the griddle. I put bacon in mine. When I want them really fancy I put cheese on one side with bacon on top and put ranch on the other piece. It is amazing!

I make mozzarella ones and then have a side a marinara to dip them in. If I have other pizza toppings I throw those in too.
I also make one with mozzarella and pesto. Amazing.
We eat a lot of grilled cheese in our house too. Now I want to stop at Walmart to get a loaf of Everything Bread so I can make some grilled cheese tonight.
This thread is making me sad. I really wanted grilled cheese sandwiches and tomato soup for dinner. But we don't have any bread...or cheese...or soup. And it's way too yucky out to go to the store. No grilled cheese for me today
to answer the question, I keep old it school. Butter, bread, cheese. Although I do want to try making it with mozzarella cheese and pepperoni with marinara for dipping. I saw that on Pinterest.

When I used to make grilled cheese my favorite special one was cheddar on sourdough with thin sliced granny smith apples. really any apples or pears are delish with cheese. Pear goes great with lighter cheeses. Also love mozz, roma tomatoes, and arugula.
There's a chain around here called Melt (not sure if it's national or local) that makes fancy grilled cheese sandwiches, so I've copied some of their "recipes." My favorite is honey apple butter (which I buy at Trader Joe's) and brie. I use the honey apple butter on the inside of the bread, and I put regular butter in the skillet. SO good.
I'm so jealous of everyone who ate grilled cheese today. This includes my H, who was taken to a grilled cheese food truck by a co-worker today.
We have a restaurant in the park that has build-your-own grilled cheese as the main portion of the menu. My favorite so far is fontina cheese with turkey and apples.
I'm going to have to go look for some garlic cheese - that sounds wonderful.
We usually just do american cheese, but sometimes switch it up with provolone and a dash of oregano and dip in marinara. If the grocery has any day old Italian bread in the bakery I'll grab a loaf and use that too. Yum.
When I was single, I would just toast bread, put some cheese in the middle and put it in the microwave fore a few seconds when I didn't feel like making grilled cheese.
Oh, I LOVE fancy grilled cheese! Lots of butter and the right bread is key, plus good cheese, of course. I use sourdough almost always, and good sharp cheddar. Brie and Muenster also make good sandwiches (not together!). Add caramelized onions to the brie, or pesto to the cheddar, or even a spicy chipotle paste. *drool*
Late to the party, here! I made some delicious grilled cheeses this weekend... I bought some fresh baked white pan bread, put some local organic butter on it, and organic sharp white cheddar. YUM. Also made one with the same bread with brie and apple slices. Double Yum!

DH sometimes puts pickles inside of them before he grills them. It's good.
They have one in the specialty cheese section of our Vons which is the same as Safeway, if you have one of those?

Yeah, instead of butter, you spread a thin layer of mayo on the inside and outside of the pieces of bread and pan fry as usual.
Try it next time instead of butter...I think it tastes so much better and it is less greasy. And less fattening, because I use lite mayo.
