meatless meals

What is your favorite meatless meal? My favorite meatless meals are summer meals. I need some inspiration for winter meals. I'm having a hard time, since i don't eat beans. TIA!

  • Hmm... no beans is tough since I love tofu, chickpeas, lentils, and pretty much any other bean! 

    How about variations on lasagna or ravioli: pumpkin, spinach or roasted veggies. 

    I also love soup like pumpkin or butternut squash with a big chunk of fresh bread during the winters (I'm too lazy to make bread from scratch so I cheat and use a mix like the beer bread mixes from Tastefully Simple!)

  • Quinoa (pronounced Keen-Wah) burgers!!!

    Quinoa is a grain that is super high in fiber and protein, so its good as a meat replacer in burgers (has quinoa, flour, oil, sugar, carrots, green onions, and a few other spices)

  • Lots of pasta dishes can be made meat-free (I love veggie lasagna and spinach ravioli the best).  DH and I also eat a lot of stuffed veggies: tomatoes stuffed with cheese, rice, and herbs; peppers stuffed with tomato sauce, rice, and cheese.  Have you ever tried chickpeas (aka garbanzo beans)?  I find their flavor and texture different from most other beans, but they're really versatile and a great source of protein.  (They're what hummus is made from, in case you didn't know.)

    My favorite vegetarian cookbook is called: How to Cook Everything Vegetarian.  It has so many ideas, you could probably eat a meatless meal everyday for a year without repeating one.

  • Thanks ladies! I can't wait to try some of your ideas. I want to try and do a meatless meal once a week. I'm getting a late start to my new year's resolution. Not loving beans makes things tough. I know most people love them, but it's the only food I really don't like. Poor DH loves them. I can tolerate chick peas, but their texture is still a little to close to a bean for me to eat a lot of.

    My family is vegan, so all of my favorite meals are meatless meals!

    Tonight I made a Tuscan-style lemon tofu (using a lemon chicken recipe but substituting sauteed tofu for the chicken) served with cooked zucchini, carrots, peppers, broccoli rabe and whole wheat linguine.

    Since you're avoiding beans, I agree with PPs suggestions: lasagna, soups (I love butter nut squash, broccoli, spinach/kale-mushroom soups). Panini (sandwiches) with roasted vegetables like bell peppers, eggplant, zucchini and/o portobello mushrooms, are nice this time of year.

    I also second the quinoa suggestion. You can serve it with any meal to boost the protein content. Sometimes I cook it with veggie broth instead of water so it has a different flavor.

    If you're interested in making some of your current favorite meals meatless, there are tons of vegetable based alternatives like: seitan (wheat gluten), tofu (soy bean) and tempeh (usually soy based, non-soy are available). Tempeh has a nutty flavor and is firm and textured. These foods are super easy to cook and have mild flavors that lend themselves to a variety of recipes, from tempeh curry to tofu tacos (one of my all time favorites!) If your grocery store doesn't have these items check out local Asian markets.

    When I make black bean burgers I put the ingredients in a food processor. That might be a way the texture would be different enough for you to enjoy. Smile

  • I'm a vegetarian. One of my favorite meatless meals is spaghetti squash with marinara sauce and cheese. SO easy to make and the leftovers taste even better. Veggie sushi is a delicious, too, especially sweet potato or avocado rolls.
